Flint at Shaw Vineyard
Jai Dawson’s love affair with wine was sparked by a chance encounter with an old friend which landed him a job as the Assistant Sommelier at the ‘Duck’ restaurant, Crown Casino. Owned by the son of the original ‘Dan Murphy’, Jai soon became well-versed in the more than 1000 labels on their wine list!
This love of wine and food, led Jai to work in some of Melbourne and Sydney’s most critically acclaimed restaurants, including six years as the Sommelier at Longrain Restaurant & Bar. Desiring a change from the hustle and bustle of city life, Jai and his family moved to the Murrumbateman region in 2008 and soon after they opened the doors to Flint in the Vines – now known as Flint at Shaw Vineyard.
Situated on the picturesque and historic property, ‘Olleyville’, at Shaw Vineyard Estate, Flint is reminiscent of the great vineyard restaurants from the country regions of France and Italy. Offering sophisticated dining in a relaxed and friendly atmosphere, the airy undercover terrace lends itself perfectly to the warmer weather, while the open fire in the large dining room roars over winter.
